I’ve always favored breakfast…I could eat it for every meal of the day if I wanted to, and sometimes I do! Last spring my sister introduced me to my favorite breakfast meal for a fast paced morning. If the picture above makes your mouth water keep reading!
Ingredients:
- Eggs- I really like Organic Valley Large Brown Eggs
- Red Onion
- Bell Peppers (your choice of color)
- Spinach
- Morning Star Sausage Links – you can find these at King Soopers, Trader Joes, Safeway, and sometimes Sprouts.
- Parmesan cheese
How to Prepare:
- First, I start by cooking the morning star sausages with a little bit of olive oil. I cook them until they are brown and are slightly crispy.
- Then I sauté the onions and bell peppers until the onions are translucent.
- Next, I turn down the heat, add in the spinach and cook it down for about one minute.
- Then I cook the scrambled eggs (2 large eggs), top them with the veggies/sausage and lastly I add some freshly grated parmesan cheese and salt!
This meal only takes 10 to 12 minutes to prepare which is perfect for me because I don’t like waking up earlier to prepare a good breakfast. Hope you enjoy!
