Call me basic but I love me some pumpkin pie! If you are a sweets person like me then you will thoroughly enjoy these mini pumpkin pie bites. They are perfect for small get togethers, holiday parties or just because you want something yummy. My mom, sister and I had a great time baking them together and had an even better time stuffing them in our faces – nom nom!
What You’ll Need:
2 pre-made pie crusts
1(80z) package of cream cheese (room temperature)
1 cup pumpkin puree
1/2 cup sugar
2 eggs plus 1 egg for egg wash
1 tsp vanilla
1 tsp pumpkin pie spice (I love the one from Trader Joe’s!)
Whipped cream
Instructions:
- Preheat oven to 350
- Grease mini cupcake pan with nonstick cooking spray
- Roll out the pre-made pie crust onto a floured surface
- Use a round cookie cutter (2 to 3 inches in diameter) to cutout 12 to 24 individual rounds (12 per pie crust)
- Press each pie crust dough into the cupcake pan
- Brush egg wash onto the top of each pie crust dough
- Beat cream cheese and sugar with an electric mixer until smooth. Add eggs one at a time until combined.
- Add pumpkin puree and mix until combined. Then, mix in vanilla and pumpkin pie spice.
- Use a spoon to put the mixture into the mini pie crusts (almost to the top)
- Bake for 15 to 20 minutes or until the pie crust edges are golden brown
- Remove them from oven and let them cool on a rack for 30 minutes
- Top each mini pumpkin pie bite with whipped cream, pumpkin pie spice and/or cinnamon!
